Ingredients
Potato and kumara salad with honey mustard dressing
- 4 medium (800g) potatoes, unpeeled, chopped coarsely
- 1 medium (400g), kumara , peeled, chopped coarsely
- 150 gram green beans, trimmed, sliced thickly
- 2 green onions, sliced thickly honey mustard dressing
Honey mustard dressing
- 2/3 cup (200g) mayonnaise
- 1 tablespoon water
- 2 teaspoon honey
- 2 teaspoon wholegrain mustard
Method
Potato and kumara salad with honey mustard dressing

1Boil, steam or microwave potato, kumara and beans, separately, until just tender, drain. Place potato and kumara in large bowl. Rinse beans under cold water, drain.

2Meanwhile, whisk ingredients for honey mustard dressing in small bowl until combined.

3Combine beans, onion and half of the dressing in bowl with potato and kumara, toss gently to combine. Combine potato mixture with remaining honey mustard dressing.
