Prawn and egg fried noodles

Ingredients

Prawn and egg fried noodles
  • 200 gram packet dried egg noodles
  • 400 gram cooked prawns, peeled
  • 1 1/2 cup frozen pea and corn mix, thawed
  • 4 eggs, at room temperature, lightly whisked
  • 1/3 cup bought honey, soy and garlic marinade

Method

    Cook noodles in a saucepan of boiling water, 3 minutes, or until tender. Drain well.

    Heat a large non-stick frying pan over moderately high heat. Add prawns and vegetables, toss, 2 minutes. Add noodles, cook, stirring, 3 minutes, or until heated.

    Pour egg over noodle mixture, stir as egg cooks, until just set, about 2 minutes. Add marinade, toss through, 2 minutes, until heated. Serve immediately.
