Prawn & prosciutto salad

If you like Caesar salad and prawn cocktails, you'll appreciate this salad of prawns, egg, prosciutto and crispy bagel croutons - just add cocktail sauce!

Ingredients

Prawn & prosciutto salad
  • 2 baby cos lettuce, quartered
  • 100 gram sliced prosciutto, torn
  • 12 large cooked prawns, peeled, deveined, tails on
  • 150 gram packet bagel crisps
  • 1/3 cup shaved parmesan
  • 4 soft-boiled eggs, halved
  • 1/2 cup store-bought cocktail-style sauce
  • lemon wedges to serve

Method

Prawn & prosciutto salad
  • 1
    Arrange lettuce on a large serving platter. Top with prosciutto, prawns, crisps, parmesan and eggs. Season.

    Drizzle with cocktail sauce and accompany with lemon wedges.

Notes

✦  Boil eggs ahead of time. Once cooled, keep in the fridge.
