Ingredients

Prawn, avocado and papaya cocktails
  • 2 avocados, peeled, sliced into wedges
  • 1 papaya, peeled, seeded, sliced into wedges
  • 1/4 small iceberg lettuce, sliced into thin wedges
  • 1 kilogram cooked medium prawns, peeled, deveined, tails intact
  • 1/3 cup coriander leaves lime wedges, to serve

  • 1/4 cup (60ml) lime juice
  • 1/4 cup (60ml) light olive oil
  • 1 tablespoon sweet chilli sauce
  • 1 teaspoon fish sauce

Method

Prawn, avocado and papaya cocktails

    Whisk all dressing ingredients together in a jug. Set aside.

    Arrange avocado, papaya, lettuce, prawns and coriander in small glasses. Drizzle with dressing and serve immediately with lime wedges.
