Ingredients
Prawn, avocado and papaya cocktails
- 2 avocados, peeled, sliced into wedges
- 1 papaya, peeled, seeded, sliced into wedges
- 1/4 small iceberg lettuce, sliced into thin wedges
- 1 kilogram cooked medium prawns, peeled, deveined, tails intact
- 1/3 cup coriander leaves lime wedges, to serve
鸡尾酒酱
- 1/4 cup (60ml) lime juice
- 1/4 cup (60ml) light olive oil
- 1 tablespoon sweet chilli sauce
- 1 teaspoon fish sauce
Method
Prawn, avocado and papaya cocktails

1Whisk all dressing ingredients together in a jug. Set aside.

2Arrange avocado, papaya, lettuce, prawns and coriander in small glasses. Drizzle with dressing and serve immediately with lime wedges.
