Pulled chicken rolls

Ingredients
- 1 kilogram chicken breast fillets
- 1 red onion, thinly sliced
- 1绿辣椒去籽,切成薄片
- 1 cup barbecue sauce
- 2 tablespoon rice-wine vinegar
- 1 teaspoon chinese five-spice
- 1 teaspoon sea salt
- 8 bread rolls of choice, split, buttered
- 3 cup finely shredded iceberg lettuce
Method

1In a large saucepan, combine chicken, onion, capsicum, sauce, vinegar, spice and salt. Pour in enough cold water to cover. Bring to boil on high. Reduce heat to low. Simmer uncovered for 25-30 minutes, until chicken is tender.

2Remove chicken from sauce, cover, and set aside to cool. Continue cooking sauce for another 30 minutes, until it reduces and thickens. Strain sauce into a jug.

3Shred cool chicken into a bowl. Add 1/3 cup sauce, tossing to coat.

4Fill rolls with lettuce and chicken, top with a little extra sauce if liked.
Notes
This delicious chicken will become a favourite lunchtime treat for adults and kids. Add sliced tomatoes and mayonnaise, if liked.
