Quesadillas with chorizo and cheese
Try cooking these in a toasted sandwich plate. Quesadillas are delicious hot from the oven but also perfect to take for work lunch. They reheat easily in the microwave or can be eaten at room temperature. While they are filling on their own, they could also be served alongside a meaty dish such as chilli con carne. Serves 4, ready in 50min.

Ingredients
Quesadillas with chorizo and cheese
- 1 tablespoon oil
- 1/2 onion, finely chopped
- 100 gram pre-cooked chorizo, thinly sliced
- 2 floury potatoes, cooked and mashed
- salt and freshly ground black pepper
- 1/2 cup grated tasty cheese
- 8 flour tortillas
Method
Quesadillas with chorizo and cheese

1Heat the oil and fry the onion until soft. Add the chorizo and potatoes, then season to taste with salt and pepper. Remove the pan from the heat and mix through the grated cheese.

2Heat the tortilla in a dry, hot frying pan for about 30 seconds, or microwave for around 15 seconds on high and then remove.

3Place a large spoonful of mixture on one half of the warm tortilla, fold over the other half to cover the cheese and secure with a cocktail stick.

4When all the tortillas have been filled, heat the oil in a large frying pan or griddle and, when hot, cook the quesadilla until golden and toasted on both sides and the cheese inside melted.
