Queso fundido

Ingredients
- 4 flour tortillas, cut into wedges
- 2 tablespoon olive oil, plus 1 tsp extra
- 1 cured chorizo, thinly sliced
- 1 jalapeno pepper, seeded, finely chopped
- 250 gram mozzarella cheese, grated
- 100 gram sour cream
- coriander leaves, to serve
Method

1Preheat a barbecue or chargrill pan on high. Brush tortilla wedges with oil and cook for 1-2 mins each side, until crisp.

2Heat a small frying pan on high. Cook chorizo for 5 mins, turning, until brown. Using a slotted spoon, remove chorizo, leaving rendered fat in pan.

3Stir in extra oil and jalapeno pepper. Cook for 1 min, until fragrant. Add cheese. Reduce heat to medium. Cook, stirring constantly, for 3-5 mins, until cheese melts. Add sour cream and stir until combined. Spoon into a serving bowl.

4Top cheese dip with extra coriander leaves. Serve with tortillas and chorizo.
Notes
You can toast the tortilla wedges in the oven, if you like. Preheat oven to 200°C or 180°C fan, place wedges on baking trays and cook for 2-3 mins, until crisp.
