Ingredients
Quinoa cookies
- 100 gram butter, chopped
- 1/3 cup firmly packed brown sugar
- 1/3 cup honey
- 1/3 cup smooth peanut butter
- 1 teaspoon vanilla bean paste
- 1 1/3 cup rice flour
- 1 cup quinoa flakes
- 1 teaspoon baking powder
- icing sugar, to dust
Method

1Preheat oven to 180°C/160°C fan forced. Grease and line 2 baking trays with baking paper.

2Combine butter, brown sugar, honey, peanut butter and vanilla in a saucepan over low heat. Stir for 5 minutes or until melted and combined. Cool slightly. Combine rice flour, quinoa and baking powder in a large bowl. Stir in cooled peanut butter mixture to form a dough. Roll heaped tablespoons of dough into 20 balls. Place on prepared tray about 3cm apart; flatten slightly. Chill for 15 minutes.

3Bake for 15 minutes or until golden brown. Cool completely on trays (cookies will firm). Serve dusted with icing sugar.
Notes
Use vanilla essence instead of paste. Quinoa flakes look like rolled oats. Grease measuring cup lightly with oil before measuring honey. Honey will pour easily, giving you an accurate measure. You can use oatmeal instead of quinoa.
