Ingredients
Pork and wanton soup
- 1.5 litre (6 cups) salt-reduced chicken stock
- 2 large carrots, cut into matchsticks
- 5 piece fresh ginger, peeled, cut into matchsticks
- 1/3 cup salt-reduced soy sauce
- 200 gram long-life egg noodles
- 1 1/2 235 g packets (24) frozen pork mini dim sims
- 2 bunches choy sum, cut into 4 cm lengths
- 400 gram pork loin steaks, thinly sliced
- 3 green onions, thinly sliced
Method
Pork and wanton soup
-
1Place stock, carrot, ginger, soy sauce and 2 cups water in a medium saucepan over high heat. Bring to the boil. Reduce heat, then simmer, uncovered, for 5-7 minutes or until carrot is tender.
-
2Add noodles and wontons. Simmer for 5 minutes or until wontons are cooked. Stir in choy sum and pork. Simmer for 2-3 minutes or until pork is cooked.
-
3Ladle soup into serving bowls. Serve sprinkled with onion.
Notes
Try thinly sliced chicken breast fillets instead of pork. Replace pork wontons with prawn or vegetable dumplings or wontons. Halve soup quantities if you have little freezer space.
