Red fruit salad with lemon mascarpone

Ingredients

Red fruit salad
  • 1 kilogram seedless watermelon
  • 250 gram strawberries, quartered
  • 150 gram raspberries
  • 2 medium_piece plums (225g), sliced thinly
  • 1 tablespoon caster sugar
  • 1/3 cup (80ml) kirsch
Lemon mascarpone
  • 250 gram mascarpone cheese
  • 2 teaspoon finely grated lemon rind
  • 2 teaspoon caster sugar
  • 1 tablespoon lemon juice

Method

Red fruit salad with lemon mascarpone

    Cut watermelon into bite-sized pieces.

    Place watermelon pieces in large serving bowl with strawberries, raspberries, plums, sugar and liqueur; toss gently to combine. Cover; refrigerate until ready to serve.

    To make lemon mascarpone, combine ingredients in small bowl.

    Serve fruit salad with lemon mascarpone.

Notes

Use a melon baller to scoop watermelon into bite-sized balls, if desired, for a more decorative look.
