Ingredients
Red fruit salad
- 1 kilogram seedless watermelon
- 250 gram strawberries, quartered
- 150 gram raspberries
- 2 medium_piece plums (225g), sliced thinly
- 1 tablespoon caster sugar
- 1/3 cup (80ml) kirsch
Lemon mascarpone
- 250 gram mascarpone cheese
- 2 teaspoon finely grated lemon rind
- 2 teaspoon caster sugar
- 1 tablespoon lemon juice
Method
Red fruit salad with lemon mascarpone

1Cut watermelon into bite-sized pieces.

2Place watermelon pieces in large serving bowl with strawberries, raspberries, plums, sugar and liqueur; toss gently to combine. Cover; refrigerate until ready to serve.

3To make lemon mascarpone, combine ingredients in small bowl.

4Serve fruit salad with lemon mascarpone.
Notes
Use a melon baller to scoop watermelon into bite-sized balls, if desired, for a more decorative look.
