Rhubarb, orange & almond rice pudding

With the added flavours of rhubarb and orange this comfort food pudding also edges you a little out of the comfort zone.

Ingredients

Rhubarb, orange & almond rice pudding
  • 3 cup milk
  • 1/4 cup sugar
  • 1茶匙磨碎的橘子皮
  • 1 teaspoon vanilla extract
  • 1/2 cup arborio rice
  • 1 cup cream, whipped
  • 1/2 cup thick natural yoghurt
  • 70 gram sliced almonds, toasted
  • 1 cup poached rhubarb

Method

Rhubarb, orange & almond rice pudding
  • 1
    Bring milk to the boil with sugar, orange rind and vanilla. Add rice and stir until boiling.

    Reduce heat and simmer very gently for 30 minutes, stirring at times until rice is well cooked.

    Allow to cool to room temperature, then fold in cream, yoghurt, almonds and rhubarb.
  • 4
    Spoon into glass bowls and refrigerate until serving.
