Roast honey carrots

Ingredients
Roast honey carrots
- 1/3 cup vegetable or olive oil
- 1 clove garlic, finely chopped
- 1 tablespoon finely chopped ginger
- 1/4 cup clear honey
- 1 kilogram carrots, halved, then quartered lengthwise
Method
Roast honey carrots

1Preheat oven to 220°C or 200°C fan forced. Combine oil, garlic, ginger, honey in a large bowl. Season with salt and pepper.

2Add carrots and toss until well coated in honey mixture.

3Transfer carrot mixture to a large, greased, ovenproof dish or roasting pan. Roast, turning occasionally, for 20-25 minutes or until tender.
Notes
Replace honey with maple syrup, if desired. This recipe is a terrific way to get kids to eat carrots.
