Ingredients

Roasted pork fillet with relish
  • 410 gram canned sliced pears in natural juice
  • 410 gram canned apricot halves in natural juice
  • 625 gram pork fillets
  • 1 tablespoon olive oil
  • 1/2 cup (125ml) water
  • 2 tablespoon white vinegar
  • 1 fresh long red chilli, chopped finely
  • 1/4 cup (40g) sultanas
  • 2 tablespoon white sugar

    Preheat oven to 240°C/475°F.

    Drain pears over small bowl; reserve juice, chop pears coarsely.

    Drain apricots, discard juice. Chop apricots coarsely.

    Place pork in oiled baking dish; drizzle with oil. Roast, uncovered, about 20 minutes or until cooked as desired. Cover pork; stand 5 minutes then slice thickly.

    Meanwhile, combine pear, apricot, reserved juice and remaining ingredients in medium saucepan; bring to the boil. Simmer, uncovered, about 20 minutes or until relish thickens slightly.

    Serve pork with relish.
