Ingredients
Roasted pork fillet with relish
- 410 gram canned sliced pears in natural juice
- 410 gram canned apricot halves in natural juice
- 625 gram pork fillets
- 1 tablespoon olive oil
- 1/2 cup (125ml) water
- 2 tablespoon white vinegar
- 1 fresh long red chilli, chopped finely
- 1/4 cup (40g) sultanas
- 2 tablespoon white sugar
Method
Roasted pork fillet with relish

1Preheat oven to 240°C/475°F.

2Drain pears over small bowl; reserve juice, chop pears coarsely.

3Drain apricots, discard juice. Chop apricots coarsely.

4Place pork in oiled baking dish; drizzle with oil. Roast, uncovered, about 20 minutes or until cooked as desired. Cover pork; stand 5 minutes then slice thickly.

5Meanwhile, combine pear, apricot, reserved juice and remaining ingredients in medium saucepan; bring to the boil. Simmer, uncovered, about 20 minutes or until relish thickens slightly.

6Serve pork with relish.
