Rockmelon passionfruit mousse

Ingredients

Rockmelon passionfruit mousse
  • 4 cup (750g) chopped rockmelon
  • 2 tablespoon honey
  • 200 gram plain yoghurt
  • 1 tablespoon gelatine
  • 2 tablespoon water
  • 2 tablespoon passionfruit pulp

Method

    Blend or process rockmelon, honey and yoghurt until smooth; transfer to large bowl.

    Sprinkle gelatine over water in small jug; stand jug in small saucepan of simmering water, stir until dissolved. Stir gelatine mixture and passionfruit pulp into melon mixture.

    Pour mousse into six ¾-cup (180ml) serving dishes; refrigerate several hours or until set.

Notes

You will need 1kg rockmelon and about 2 passionfruit for this recipe.
