Ingredients
Rockmelon passionfruit mousse
- 4 cup (750g) chopped rockmelon
- 2 tablespoon honey
- 200 gram plain yoghurt
- 1 tablespoon gelatine
- 2 tablespoon water
- 2 tablespoon passionfruit pulp
Method
Rockmelon passionfruit mousse

1Blend or process rockmelon, honey and yoghurt until smooth; transfer to large bowl.

2Sprinkle gelatine over water in small jug; stand jug in small saucepan of simmering water, stir until dissolved. Stir gelatine mixture and passionfruit pulp into melon mixture.

3Pour mousse into six ¾-cup (180ml) serving dishes; refrigerate several hours or until set.
Notes
You will need 1kg rockmelon and about 2 passionfruit for this recipe.
