Rocky road ice-cream
A tub of plain vanilla ice-cream is transformed into a rocky road delight in no time. Serve as soon as it's set ... or hide in the back of the freezer to serve as special treats.

Ingredients
Rocky road ice-cream
- 2 litre good quality vanilla ice-cream
- 200 gram packet chocolate-coated chocolate biscuits, roughly chopped
- 250 gram marshmallows, chopped
- 100 gram glace‚ cherries, chopped
- 1/3 cup dry-roasted almonds, roughly chopped
- 8 waffle cones
- chocolate dessert topping, to serve
Method
Rocky road ice-cream

1Using a large metal spoon, scoop ice-cream into a large bowl. Stand for 15 minutes or until softened, but not melted.

2Add biscuits, marshmallows, cherries and almonds. Stir until combined. Spoon ice-cream mixture into a large metal container. Freeze for 4 hours or until firm.

3Scoop ice-cream into waffle cones. Drizzle with chocolate topping. Serve at once.
Notes
Clever idea: Use lightly oiled scissors to chop marshmallows.
