Ingredients
Salami and pesto pizza muffins
- 4 wholemeal english muffins, split
- 1/2 cup basil pesto
- 1 green capsicum, finely chopped
- 3 thick slices danish salami, chopped
- 1/3 cup pitted kalamata olives, sliced
- 3/3 cup grated mozzarella cheese
- salad leaves, to serve
Method
Salami and pesto pizza muffins

1Preheat an oven-grill to moderately high. Place muffins on a baking tray. Grill until lightly toasted on both sides.

2Spread cut side of muffins with pesto. Top with capsicum, salami, olives and mozzarella. Grill for 3 minutes or until golden and cheese melts. Serve with salad leaves.
Notes
Swap olives for drained canned pineapple pieces as an after-school treat. You can buy thickly sliced Danish salami at the deli counter.
