Ingredients

Salmon carpaccio
  • 1/2 green capsicum, seeded, finely diced
  • 1 eschalot, finely chopped
  • 300 gram salmon fillet, thinly sliced
  • 1 tablespoon dill sprigs
  • 2 tablespoon lime juice
  • 2 tablespoon extra virgin olive oil
  • toasted bread, to serve

Method

Salmon carpaccio
  • 1
    Spread half the capsicum and eschalot onto a large serving plate. Top with salmon in single layer.
  • 2
    Scatter over remaining capsicum, eschalot and dill. Drizzle juice and oil over. Season to taste. Chill covered, 1 hour. Serve on toasted bread.
