Ingredients
Salmon carpaccio
- 1/2 green capsicum, seeded, finely diced
- 1 eschalot, finely chopped
- 300 gram salmon fillet, thinly sliced
- 1 tablespoon dill sprigs
- 2 tablespoon lime juice
- 2 tablespoon extra virgin olive oil
- toasted bread, to serve
Method
Salmon carpaccio

1Spread half the capsicum and eschalot onto a large serving plate. Top with salmon in single layer.

2Scatter over remaining capsicum, eschalot and dill. Drizzle juice and oil over. Season to taste. Chill covered, 1 hour. Serve on toasted bread.
