Salted peanut caramel sundaes

Ingredients
Salted peanut caramel sundaes
- 50克的屁股er
- 1/2 cup firmly packed brown sugar
- 300 millilitre cream
- 1/4 cup salted peanuts, chopped, plus 1/4 cup, finely chopped, extra
- 8 bought multi-coloured flat-bottomed ice-cream cones
- 8 large scoops hokey pokey ice-cream
Method
Salted peanut caramel sundaes

1Melt butter in a small saucepan over moderate heat. Add sugar; cook and stir for 1 minute or until sugar dissolves. Add 1 cup of the cream; cook and stir for 2 minutes or until mixture comes to the boil. Transfer caramel mixture to a medium heatproof jug. Cool. Stir in 1/4 cup peanuts. Chill for 20 minutes. Reserve 1 tablespoon.

2Using an electric mixer, beat remaining cream until soft peaks form. Stir in half the extra peanuts.

3Pour peanut caramel into base of cones. Top each cone with a scoop of ice-cream. Drizzle with reserved caramel. Top with cream mixture. Sprinkle with remaining peanuts. Serve immediately.
Notes
Make a double batch of caramel sauce; it's great to have on any ice-cream.
