Sausage and noodle salad
  • 200 gram dried large rice stick noodles
  • 3 celery sticks, thickly sliced diagonally
  • 3 green onions, thinly sliced
  • 2 tablespoon white wine vinegar
  • 2 tablespoon soy sauce
  • 1 tablespoon grated fresh ginger
  • 3 teaspoon sesame oil
  • 4 thin pork sausages
  • 1 large red capsicum, thinly sliced
  • 1/2 cup small basil leaves

    Cook noodles in a large saucepan of boiling water according to packet directions. Drain; rinse under cold running water. Drain well; place in a large shallow heatproof serving bowl. Add celery and onion; toss to combine.

    Meanwhile, combine vinegar, soy sauce, ginger and oil in a small jug.

    Preheat a barbecue flatplate or large char-grill pan over moderately high heat. Add sausages and capsicum; cook and turn for 6-8 minutes or until browned and cooked. Transfer sausages to a heatproof board; thickly slice diagonally. Add sausage, capsicum and dressing to noodle mixture in bowl; toss to combine. Serve salad warm, sprinkled with basil.
