Sausage crepes

Ingredients
Sausage crepes
- 1 tablespoon vegetable or olive oil
- 8 thin beef and herb sausages
- 400 gram jar tomato pasta sauce
- 8 fresh or frozen (thawed) french-style crepes
- 1 cup coarsely grated mozzarella cheese
- mixed salad, to serve
Method

1Preheat oven to 200°C/180°C fan-forced. Lightly grease a 25 x 18cm (base measurement) ovenproof dish. Heat oil in a large frying pan over moderately high heat. Cook and turn sausages for 4-5 minutes or until browned. Remove from pan.

2Spread 1/2 cup pasta sauce over base of prepared dish. For each crepe, place a crepe on a flat surface. Place sausage across centre of crepe. Roll up to enclose sausage. Place crepe, seam-side down, in prepared dish.

3Spoon remaining sauce over crepes. Sprinkle with mozzarella. Bake for 30 minutes or until golden brown and bubbly. Stand for 5 minutes. Serve with salad.
Notes
Try using your favourite pasta sauce, such as a tomato based sauce with vegetables or herbs. To thaw frozen crepes, stand at room temperature for 1 hour.
