Sausage tacos with chilli tomato salsa
  • 6 pork chipolata sausages
  • 1 teaspoon mild taco seasoning
  • 1 medium ripe tomato, finely chopped
  • 1 tablespoon finely chopped onion
  • 1 fresh small red chilli, seeded, finely chopped
  • 3 teaspoon vegetable or olive oil
  • 6 flat-based taco shells
  • 4 large lettuce leaves, shredded
  • 1/3 cup firmly packed grated reduced-fat tasty cheese
  • 1/2 ripe avocado, cut into 6 thin wedges
  • 1/4 cup light sour cream

Method

    Sprinkle sausages with taco seasoning; stand for 5 minutes. Combine tomato, onion, chilli and 2 teaspoons of the oil in a small bowl; mix salsa well.

    Preheat oven to 180°/160°C fan forced. Place taco shells on a baking tray. Bake for 5 minutes or until crisp.

    Meanwhile, heat remaining oil in a small frying pan over moderate heat. Add sausages; cook and turn for 5-6 minutes or until cooked

    Place lettuce in the base of each taco shell. Top with sausage, cheese, tomato salsa, avocado and sour cream. Serve.

Notes
