Ingredients
Sausages with polenta and spicy tomato sauce
- olive oil
- 1 litre (4 cups) water
- 1 cup (170g) polenta
- 1 cup (120g) coarsely grated cheddar cheese
- 8 thick pork sausages (960g)
spicy tomato sauce
- 2 teaspoon olive oil
- 1 red onion (170g), sliced thinly
- 1 clove garlic, crushed
- 1 fresh small red thai chilli, chopped finely
- 4 tomatoes (600g), chopped coarsely
Method
Sausages with polenta and spicy tomato sauce

1Oil deep 19cm-square cake pan.

2Bring the water to the boil in medium saucepan; gradually stir in polenta. Reduce heat; simmer, stirring, about 10 minutes or until polenta thickens. Stir in cheese; spread polenta into pan, cool 10 minutes. Cover; refrigerate 3 hours or until firm.

3Meanwhile, to make spicy tomato sauce, heat oil in medium saucepan; cook onion, garlic and chilli, stirring, until onion softens. Add tomato; simmer, covered, until tomato softens.

4Cut polenta into quarters. Cook polenta and sausages, in batches, on heated oiled barbecue until polenta is browned both sides and sausages are cooked through.

5Serve sausages on polenta squares, topped with spicy tomato sauce.
