Sesame beef, radish and cucumber noodle salad
Fresh, summery and utterly delicious, this Asian spiced noodle salad is beautiful topped with perfectly cooked beef steaks and sprinkled with toasted sesame seeds.

Ingredients
Sesame beef, radish and cucumber noodle salad
- 2 200g budget beef porterhouse steaks
- cooking oil spray
- 180 gram dried rice vermicelli
- 1 medium carrot, halved lengthwise, sliced
- 1 red capsicum, cut into thin strips
- 1 lebanese cucumber, halved, seeded, thinly sliced
- 2 green onions, sliced diagonally
- 4 radish, halved, thinly sliced
- 1/4 cup bought asian dressing
- 1 1/2 tablespoon toasted sesame seeds
- coriander, to serve
- lemon wedges, to serve
Method
Sesame beef, radish and cucumber noodle salad

1Heat a barbecue or char-grill to moderately high. Spray beef with oil. Add to grill. Cook 2-3 minutes each side for medium, or until cooked to your liking. Transfer to a heatproof plate. Cover with foil. Rest 5 minutes. Slice thinly.

3Add carrot, capsicum, cucumber, onion, radish and dressing to noodles. Toss to combine. Spoon salad into shallow serving bowls. Top salad with beef. Sprinkle with sesame seeds. Top with coriander. Serve with lemon wedges.
Notes
Budget tip: Use rump or blade steak instead of budget beef porterhouse. Budget beef porterhouse is a cheap alternative to porterhouse steak. Try replacing rice noodles with dried egg noodles.
