Ingredients
Shells with potato and bean sauce
- 2 tablespoon olive oil
- 3 medium potatoes, boiled, peeled, cut into large chunks
- 250 gram green beans, blanched, cut into thirds
- 3中西红柿丁
- 16 pitted black olives
- 1个小新鲜的红辣椒,finely chopped
- 3 anchovy fillets, finely chopped
- 1/3 cup chopped parsley
- 375 gram pasta shells
- grated parmesan, to serve
Method
Shells with potato and bean sauce

1Heat oil in a large saucepan on medium. Add potato and beans; cook 3 minutes, until lightly coloured.

2Add tomato and any juice, olives and chilli. Season to taste; cook another 5 minutes, stirring occasionally. Stir through anchovies and parsley.

3Meanwhile, cook pasta shells in a large saucepan of boiling, salted water according to packet directions; drain. Return to saucepan with potato mixture; toss to combine. Serve immediately with parmesan.
Notes
These large ribbed pasta shells are great for sauce to cling to, and for taking hold of the delicious flavours of the dish.
