Ingredients
Smoked chicken and avocado salad
- 1/2 cup (50g) walnuts
- 1 1/2 tablespoon maple syrup
- 125 gram mesclun
- 250 gram smoked chicken breast fillet, sliced thinly
- 2 oranges (360g), halved, sliced thinly
- 2 avocados (400g), chopped coarsely
Mustard dressing
- 2 teaspoon dijon mustard
- 2 teaspoon wholegrain mustard
- 1 tablespoon maple syrup
- 2 teaspoon white vinegar
Method
Smoked chicken and avocado salad

1Preheat oven to 180°C/350°F. Line oven tray with baking paper.

2Place nuts on oven tray; add syrup, stir to coat. Roast about 12 minutes; cool.

3Make maple mustard dressing. Combine ingredients in small bowl.

4Place mesclun, chicken and orange on serving platter; season. Top with avocado, sprinkle with nuts; drizzle with dressing.
