Ingredients

Smoked chicken and avocado salad
  • 1/2 cup (50g) walnuts
  • 1 1/2 tablespoon maple syrup
  • 125 gram mesclun
  • 250 gram smoked chicken breast fillet, sliced thinly
  • 2 oranges (360g), halved, sliced thinly
  • 2 avocados (400g), chopped coarsely
Mustard dressing
  • 2 teaspoon dijon mustard
  • 2 teaspoon wholegrain mustard
  • 1 tablespoon maple syrup
  • 2 teaspoon white vinegar

Method

    Preheat oven to 180°C/350°F. Line oven tray with baking paper.

    Place nuts on oven tray; add syrup, stir to coat. Roast about 12 minutes; cool.

    Make maple mustard dressing. Combine ingredients in small bowl.

    Place mesclun, chicken and orange on serving platter; season. Top with avocado, sprinkle with nuts; drizzle with dressing.
