Smoked fish salad with marinated onions
This meal has great punchy flavours and makes a tasty dinner for four.

Ingredients
- 400 gram new baby potatoes, scrubbed and halved
- 1 red onion, finely sliced
- 1/4 cup white vinegar
- 1 tablespoon caster sugar
- 3/4 cup mayonnaise
- 1 lemon, zest and juice
- small bunch fresh dill
- 1茶匙柠檬、辣椒和莳萝调味料或sim卡ilar
- 1.5 gherkins, finely diced
- radicchio or fancy lettuce
- watercress or rocket leaves
- 350 gram boneless smoked fish
- 7 sundried tomatoes, sliced
Method

1Cook the potatoes in plenty of boiling water for 10-12 minutes or until just tender. Drain and allow to cool. Toss the red onion slices with the vinegar and sugar and set aside for 10 minutes (this will turn them pink).

2Combine the mayonnaise, lemon juice and zest, chopped dill, seasoning and gherkins and mix well. Arrange the radicchio leaves and watercress on a platter.

3Toss the potatoes with half the dressing and pile onto the salad leaves. Top with smoked fish and sundried tomatoes then dollop on the remaining dressing. Garnish with the marinated onions.
