Ingredients
Snowballs
- 1 cup (120g) ground almonds
- 1/4 cup (120g) icing sugar, plus extra to dust
- 1 eggwhite
Method

1Preheat oven to 160°C. Line a baking tray with baking paper. Process ground almonds in a food processor until a paste forms. Add icing sugar and eggwhite and process until smooth.

2Roll 2 teaspoons of mixture into a ball. Repeat with remaining mixture. Roll each ball in sifted icing sugar to coat thickly. Place on prepared tray and bake for 10 minutes, until puffed. Cool and transfer to paper patty cases to serve. Store in an airtight container.
Notes
You can also crush the almonds for this recipe in a mortar and pestle.
