Soft polenta with sausages and spinach
Polenta makes a delicious substitute for the traditional mashed potato in this lovely family meal.

Ingredients
Soft polenta with sausages and spinach
- 3 cup cold water
- 1 cup polenta
- 1/2 cup cream
- 1/4 cup finely grated parmesan
- 30 gram butter
- 8 italian sausages, cooked, kept hot
- sautéed baby spinach leaves, cherry tomatoes, to serve
Method
Soft polenta with sausages and spinach

1Bring water to the boil in a large saucepan on high. Gradually add polenta in a thin steady stream, whisking constantly, until all the polenta is incorporated and smooth - don't add the polenta too quickly or it will turn lumpy.

2Reduce heat to low. Simmer, stirring constantly with a wooden spoon, for 10 minutes or until the mixture thickens and the polenta is soft.

3Remove from heat and blend in the cream, parmesan and butter. Stir until well combined. Season to taste and serve with sausages, spinach and tomatoes.
Notes
Cook the polenta over low heat, otherwise it will cook too quickly and you will need to add extra water. To test if polenta is cooked, spoon a little onto a plate, cool and then rub between your fingers to check if grains are soft. If they're firm, continue cooking.
