Ingredients

Spaghetti with tuna and spinach
  • 400 gram spaghetti
  • 2 tablespoon vegetable or olive oil
  • 1 medium red onion, finely chopped
  • 2 clove garlic, crushed
  • 100 gram bought roasted red capsicum, thinly sliced
  • 425 gram can tuna in brine, drained, flaked
  • 1/3 cup pitted kalamata olives, thinly sliced
  • 1 teaspoon finely grated lemon zest
  • 150 gram baby spinach
  • grated fresh parmesan, to serve

Method

    Cook pasta in a large saucepan of boiling salted water for 8-10 minutes or until tender. Drain.

    Meanwhile, heat half the oil in a large frying pan over moderately high heat. Add onion; cook and stir for 5 minutes or until soft. Add garlic; cook and stir for 1 minute or until fragrant. Add capsicum, tuna, olives and zest; cook and stir for 2 minutes.

    Add pasta and remaining oil. Remove from heat; stir in spinach until wilted. Serve topped with parmesan.
