Ingredients
Spaghetti with tuna and spinach
- 400 gram spaghetti
- 2 tablespoon vegetable or olive oil
- 1 medium red onion, finely chopped
- 2 clove garlic, crushed
- 100 gram bought roasted red capsicum, thinly sliced
- 425 gram can tuna in brine, drained, flaked
- 1/3 cup pitted kalamata olives, thinly sliced
- 1 teaspoon finely grated lemon zest
- 150 gram baby spinach
- grated fresh parmesan, to serve
Method
Spaghetti with tuna and spinach

1Cook pasta in a large saucepan of boiling salted water for 8-10 minutes or until tender. Drain.

2Meanwhile, heat half the oil in a large frying pan over moderately high heat. Add onion; cook and stir for 5 minutes or until soft. Add garlic; cook and stir for 1 minute or until fragrant. Add capsicum, tuna, olives and zest; cook and stir for 2 minutes.

3Add pasta and remaining oil. Remove from heat; stir in spinach until wilted. Serve topped with parmesan.
