Spaghettini with prawns, rocket and chilli

Ingredients
Spaghettini with prawns, rocket and chilli
- 375 gram spaghettini
- 1/4 cup (60ml) olive oil
- 500 gram green prawns, peeled, deveined, tails intact
- 1 small red chilli, seeded, finely sliced
- 2 clove garlic, crushed
- 150 gram rocket, trimmed
- lemon wedges, crusty bread, to serve
Method
Spaghettini with prawns, rocket and chilli

1In a large saucepan of boiling, salted water cook spaghettini according to packet directions. Drain.

2Heat olive oil in a large frying pan on high. Saute prawns 3 minutes, until opaque. Add chilli and garlic and cook 1 minute, taking care not to let garlic burn.

3Return pasta to saucepan with prawns, chilli and garlic. Add rocket and toss to combine on medium heat for 1 minute, to wilt slightly. Serve with lemon wedges and crusty bread.
Notes
Use a good-quality plain olive oil over an extra virgin oil for this dish. Most of the fruity fragrance of the extra virgin olive oil is lost with high heat.
