Ingredients
Spiced fig and apple jam
- 2 granny smith apples (500g), peeled, cored, chopped finely
- 2 cup (500ml) water
- 16 fresh figs (1 kg), chopped coarsely
- 1/2 cup (125ml) orange juice
- 1.1 kilogram (5 cups) caster (superfine) sugar, approximately
- 2 tablespoon finely grated orange rind
- 3 star anise
- 1 cinnamon stick, halved
- 2 vanilla beans, halved lengthways
Method
Spiced fig and apple jam

1Combine apple and the water in large saucepan; bring to the boil. Reduce heat; simmer, covered, about 20 minutes or until apple is soft. Add figs and juice; simmer, covered, 10 minutes.

2Measure fruit mixture; allow ¾ cup (165g) sugar for each cup of mixture. Return mixture and sugar to pan with remaining ingredients; stir over heat, without boiling, until sugar dissolves. Boil, uncovered, about 45 minutes or until jam gels when tested.

3Pour into hot sterilised jars; seal immediately.
Notes
Finely grate the rind from the oranges before juicing them.
