Ingredients
Spiced red lentil soup
- 1 large brown onion (200g), chopped finely
- 1 fresh long red chilli, sliced thinly
- 1 tablespoon mild curry paste
- 2 cup (500ml) chicken stock
- 2 cup (500ml) water
- 400克罐头蕃茄丁
- 1/2 cup (100g) red lentils, rinsed
- 100 gram piece smoked ham, cut into (½-inch) pieces
- 150 gram baby spinach leaves
- 1/4 cup fresh coriander leaves (cilantro)
Method
Spiced red lentil soup

1Heat medium non-stick saucepan over medium heat, cook onion and chilli, stirring, until onion softens. Add curry paste, cook, stirring, about 1 minute or until fragrant.

2Add stock, then water, undrained tomatoes and lentils, bring to the boil. Reduce heat, simmer, covered, about 20 minutes or until lentils are tender. Stir in ham and spinach, return to the boil. Season to taste.

3Serve soup topped with coriander.
Notes
Reheat the soup, covered, in a microwave oven on HIGH (100%) for about 1½ minutes.
