Ingredients
Spicy apple muffins
- 2 large cooking apples, peeled and sliced (to make 1 cup of hot stewed apples)
- 1 tablespoon water
- juice of 1 lemon
- 170 gram plain flour
- 55 gram wholemeal flour
- 1 tablespoon mixed spice
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 115 gram sugar
- 1/2 cup sultanas
- 6 dates, pitted and chopped
- 1 egg
- 115 gram butter, melted
Topping
- 2 tablespoon lemon juice
- 1/4 cup raw sugar
Method
Spicy apple muffins

1Preheat oven to 200°C. Generously butter a 12-hole muffin tin.

2Cook the apples with the water and lemon juice until they are reduced to a pulp; do not sweeten.

3Combine all the dry ingredients in a large bowl, stirring until they are well mixed. Use your fingers to separate out the sultanas and the pieces of date.

4Beat the egg and add it to the dry ingredients with the melted butter and the piping hot apple. Mix lightly until combined, and then spoon the mixture into the muffin tin.

5Bake for 20-25 minutes until the muffins are well risen and browned. Remove the tin to a cooling rack.

6After about 5 minutes, when the muffins have cooled a little, take each one out of the tin and dip the tops into the lemon juice, followed by the raw sugar. Set aside to cool completely – or eat them warm. They keep in an airtight container for 1-2 days.
