Spicy apple tea cake
- 200 gram butter, plus extra to grease pan
- 2/3 cup caster sugar
- 1 lemon, rind finely grated
- 3 eggs
- 1/2 cup plain flour
- 1 cup self-raising flour
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger

- 1/3 cup warmed apricot jam, sieved
Method
Spicy apple tea cake
-
1Preheat oven to 180°C (160°C fan-forced). Grease and flour cake pan, then place a piece of baking paper in base.
-
2Beat butter and sugar in a bowl with an electric mixer until light and fluffy. Add rind, then beat in eggs, one at a time, beating well after each addition.
-
3Sift flours, cinnamon, ginger and nutmeg into egg mixture. Pour in milk; stir with a wooden spoon to combine. Pour mixture into prepared pan.
-
4Peel apples and cut into halves. Remove cores. With a paring knife, cut thin slits into apples. Arrange apples over top of cake and sprinkle with extra sugar/cinnamon mixture.
-
5Bake for 40 minutes or until a skewer inserted into centre of cake (not apples) comes out clean. Remove cake from oven and brush with warmed jam. Stand cake in pan for 10 minutes; turn, top-side up, onto a wire rack to cool. Serve warm or at room temperature.
