Spicy apple tea cake

This old-fashioned treat is easy to make - and quite healthy for a cake! So get baking, then put your feet up with a cuppa.

Ingredients

Spicy apple tea cake
  • 200 gram butter, plus extra to grease pan
  • 2/3 cup caster sugar
  • 1 lemon, rind finely grated
  • 3 eggs
  • 1/2 cup plain flour
  • 1 cup self-raising flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 1/2 cup milk
  • 4 granny smith apples
  • 2 teaspoon sugar, extra, mixed with 1/2 tsp ground cinnamon

  • 1/3 cup warmed apricot jam, sieved

    Preheat oven to 180°C (160°C fan-forced). Grease and flour cake pan, then place a piece of baking paper in base.

    Beat butter and sugar in a bowl with an electric mixer until light and fluffy. Add rind, then beat in eggs, one at a time, beating well after each addition.

    Sift flours, cinnamon, ginger and nutmeg into egg mixture. Pour in milk; stir with a wooden spoon to combine. Pour mixture into prepared pan.

    Peel apples and cut into halves. Remove cores. With a paring knife, cut thin slits into apples. Arrange apples over top of cake and sprinkle with extra sugar/cinnamon mixture.

    Bake for 40 minutes or until a skewer inserted into centre of cake (not apples) comes out clean. Remove cake from oven and brush with warmed jam. Stand cake in pan for 10 minutes; turn, top-side up, onto a wire rack to cool. Serve warm or at room temperature.
