Spicy couscous meatloaves
- 1/3 cup couscous
- 1/3 cup boiling water
- 750 gram lean lamb mince
- 1 small red onion, grated
- 1/4 cup korma curry paste
- 1 egg, lightly beaten
- 2 tablespoon currants
- 1 apple, thinly sliced
- 1 carrot, shredded
- 1 cup parsley leaves
- 1 tablespoon lemon juice
- 1 tablespoon extra-virgin olive oil
Method
Spicy couscous meatloaves

1Preheat oven to moderate, 180°C. Line 4 x 1-cup mini loaf pans with a strip of baking paper, covering base and long sides.

2Place couscous in a large heatproof bowl. Add boiling water. Cover and set aside 3-4 minutes. Fluff with a fork to separate grains.

3In a large bowl, combine mince, couscous, onion, curry paste, egg and currants. Season to taste. Press mixture into pans. Smooth surface. Cover with foil.

4Bake for 20 minutes. Remove foil, then bake for 15-20 minutes until cooked through. Serve hot, or allow to cool and keep chilled in an airtight container until required.

5SALAD: In a salad bowl, toss all ingredients together. Season to taste. Serve meatloaves in slices with salad.
Notes
Top meatloaves with a dollop of Greek yoghurt, mango chutney and crispy crumbled pappadums, if liked.
