Spicy sausages and vegetable hash with salsa

Ingredients
Spicy sausage and vegetable hash
- 1 large potato
- 2 tablespoon vegetable or olive oil
- 4 thick pork sausages
- 1 medium brown onion, halved, thinly sliced
- 1 clove garlic, crushed
- 1/4 teaspoon dried chilli flakes, or to taste
- 1 medium carrot, finely chopped
- 1 large capsicum, finely chopped
- mixed salad, to serve
- fast salsa, to serve
Salsa
- 2 large tomatoes, finely chopped
- 1 small red onion, finely chopped
- 1 clove garlic, crushed
- 1 teaspoon olive oil
- 2 teaspoon balsamic vinegar
Method
Spicy sausages and vegetable hash with salsa

1Boil, steam or microwave potato until just tender. Cool. Chop. Make Fast Salsa as recipe directs.

2Meanwhile, heat half the oil in a medium frying pan over moderate heat. Add sausages; cook and turn for 10 minutes or until browned and cooked. Remove sausages from pan; set aside. Cover, then keep warm.

3Add remaining oil to pan. Cook onion for 4-5 minutes or until soft. Add garlic and chili flakes; cook and stir for 1 minute or until fragrant. Add potato and carrot; cook and stir for 10-15 minutes or until vegetables are crisp. Add capsicum to pan; toss to combine. Cook for 4-5 minutes more or until tender.

4Meanwhile, make salsa: combine all ingredients in a small glass bowl.

5Spoon hash onto serving plates; top with sausages and salsa. Serve with salad.
Notes
You can use any vegetables, including cooked leftovers. Use your favourite sausages. If you don't have chilli flakes, sprinkle with hot chilli sauce, to taste, when adding capsicum. Fast Salsa: Makes 1 cup
