Sweet couscous with stewed fruit
- 250 gram mixed dried fruit, such as apricots, peaches, pears and prunes
- 1/2 orange, rind
- 1 stick cinnamon
- 1 1/2 cup (375m|) orange juice
- 1 1/2 cup (300g) couscous
- 1/4 cup (40g) currants
Method
Sweet couscous with stewed fruit

1Place mixed dried fruit in a large bowl. Cover with water; soak for several hours or overnight.

2Place fruit and soaking water in a saucepan. Add orange rind and cinnamon stick; bring gently to the boil on medium heat.

3Reduce heat to low. Cover; simmer 15-20 minutes, until fruit is soft and plump. Drain; set fruit aside and pour liquid back into pan. Boil on high heat 5 minutes, until syrupy and reduced by half.

4Meanwhile, strain orange juice into a saucepan and bring to the boil. Stir in couscous; cover and remove from heat. Stand 5 minutes. Fold through currants; stand, covered, 5 minutes. Fluff with a fork.

5To serve, pile couscous into serving bowls, top with fruit and spoon over syrup.
