Terakihi subs
Using simple ingredients, you can make the tastiest of meals that are no fuss on your long weekend with whanau.

Terakihi subs
- 4 fillets terakihi (or similar white fish)
- 1/2 cup flour
- 1 teaspoon curry powder
- 2 eggs
- cooking oil
- 1/2 cup good-quality mayonnaise
- 1 lemon, zest
- 2 tablespoon capers, chopped
- 1/4 cup chopped fresh herbs (e.g. parsley, mint, chives, basil or coriander)
- 6 subs (or long bread rolls)
- iceberg lettuce, sliced lemon wedges to serve
Method
Terakihi subs

1Chop terakihi fillets into three.

2Put flour and curry powder into a plastic bag with a little salt and pepper. Shake mixture to combine.

3Add fish fillets to the bag, then gently shake to coat fish.

4In a shallow bowl, whisk eggs.

5Heat oil in a frypan. Dredge floured fish fillets in egg and gently place into oil, then shallow-fry on both sides until fillets are golden brown. Remove from pan when cooked and drain on paper towels. Set aside.

6In a small bowl, combine mayonnaise, lemon zest, capers and fresh herbs.

7Heat subs, if desired, then split in half and spread both sides with mayo mixture.

8Divide sliced lettuce between subs and topwith two fish fillets. Place lids on subs and serve with lemon wedges.
Notes
If preferred, cook just the terakihi using this recipe, then serve with your favourite potato dish and salad, using the mayo recipe as a side dish.
