Thai beef salad

Healthy eating is easy with this Asian-inspired beef salad that�s bursting with fresh Thai flavours. Seared and marinated beef is served on a bed of crisp lettuce and cucumber.

Ingredients

Thai beef salad
  • 4 scotch fillet steaks (about 125-150g each)
  • cooking oil spray
  • 2 lebanese cucumbers, sliced
  • 250 gram cherry tomatoes, halved
  • 100 gram mixed salad leaves
  • 1 cup mint leaves
  • 1 cup coriander leaves
  • 1/2 cup basil leaves
  • 8 green onions, sliced
Sweet chilli lime dressing
  • 1/4 cup lime juice
  • 2 tablespoon kecap manis
  • 2 tablespoon sweet chilli sauce
  • 1 teaspoon brown sugar
  • 1 clove garlic, crushed
  • 1/4 teaspoon chopped chilli

Method

Thai beef salad

    Lightly grease a char-grill pan or barbecue plate with spray oil. Heat on high.

    Cook steak 3-5 minutes each side, or until cooked to your liking. Transfer to a plate. Cover with foil; rest 5 minutes.

    Meanwhile, toss all salad ingredients together in a bowl. Slice steak across the grain.

    To make sweet chilli lime dressing, whisk together all ingredients; season to taste.

    Toss dressing through salad mixture with beef. Serve.
