Ingredients
Three cheese tart
- 1 1/2 sheets, thawed frozen puff pastry
- 400 gram ricotta
- 100 gram goat's feta
- 1/4 cup parmesan, grated
- 3 eggs
- 1/4 cup cream
- 1 grated lemon zest
- 2 tablespoon pine nuts
- salad, to serve
Method
Three cheese tart

1Preheat oven to moderate, 180°C. Lightly grease a 24cm round flan pan with removable base.

2Line pan with pastry sheets, cutting and joining to fit. Trim edges and chill 15 minutes.

3Bake 15 minutes, until puffed and lightly golden. Press down to flatten base.

4In a food processor, combine cheeses, eggs, cream and zest. Process until smooth. Season to taste. Pour into tart shell, smoothing top. Sprinkle with pine nuts.

5Bake 20-25 minutes, until filling is just set. Cool in pan 10 minutes. Serve warm or cold with salad.
