Ingredients
Three-in-one mix fruit cake
- 4 1/4 cups three-in-one basic fruit mix (see three-in-one basic fruit mix recipe)
- 185 gram (6 ounces) butter, melted
- 3 eggs, beaten lightly
- 1 1/2 cup (225g) plain (all-purpose) flour
- 1/2 teaspoon bicarbonate of soda (baking soda)
- 1/4 cup (60ml) brandy
Method
Three-in-one mix fruit cake

1Preheat oven to 140°C (120°C fan forced). Line base and side of deep 20cm (8-inch) round cake pan with 1 layer of brown paper and 2 layers of baking paper, extending paper 5cm (2 inches) over edge of pan.

2Place basic fruit mix in large bowl. Stir in butter, eggs and sifted flour and baking soda.

3Spread mixture into pan, level top. Bake about 2½ hours. Brush hot cake with brandy. While still hot, cover cake, still in its pan, tightly with foil, then wrap in a towel and cool overnight.
