Tofu patties with thai salsa

This delicious tofu patties recipe with Thai salsa makes for a perfect healthy summer lunch. Soft and tender on the inside while lightly crispy on the outside, and full of flavour!

Ingredients

Tofu patties with Thai salsa
  • 400 gram can cannellini beans, drained, rinsed
  • 200 gram firm tofu, drained on paper towel
  • 2 slices wholegrain bread, broken into pieces
  • 1 red onion, roughly chopped
  • 1/4 cup mint leaves
  • 1/4 cup coriander leaves
  • 1 tablespoon teriyaki marinade
  • 1 egg, lightly beaten
  • 1 clove garlic, crushed
  • 2 tablespoon self-raising flour
  • 2 tablespoon vegetable oil
  • salad, lo serve
Thai salsa
  • 1 lebanese cucumber, halved, seeded, finely chopped
  • 2 tablespoon chopped coriander
  • 2 tablespoon lemon juice
  • 1 small red chilli, finely chopped
  • 1 teaspoon brown sugar

Method

Tofu patties with Thai salsa
  • 1
    Place beans, tofu, bread, onion, herbs, teriyaki , egg and garlic in a food processor; process until smooth. Add flour; blend again until combined.

    Heat oil in a medium frying pan on high; place egg rings into pan. Spoon tofu mixture into egg rings; cook on medium heat 2-3 minutes each side, or until firm and golden. Drain on paper towel. Repeat process until all mixture is cooked.

    To make thai salsa, combine all ingredients in a small bowl, tossing well.

    Serve patties topped with salsa. Accompany with salad.
