Tomato and bacon toasts

Ingredients
Tomato and bacon toasts
- 2 tomatoes, finely chopped
- 1 tablespoon red wine vinegar or sherry vinegar
- 1/3 cup vegetable or olive oil
- 3 middle bacon rashers, rind removed
- 12 slices sourdough breadstick (baguette)
- 1 clove garlic, halved
- 2 tablespoon small thyme sprigs
Method
Tomato and bacon toasts

1Combine tomato, vinegar and half the oil in a bowl. Season.

2Preheat an oven-grill to high. Place bacon on a baking tray. Grill turning once, for 5 minutes or until crisp. transfer to paper towels; chop coarsely.

3Place bread slices on baking tray. Drizzle with remaining oil. Season. Grill for 2 minutes each side or until golden. Rub 1 side of each slice with garlic. Top with tomato mixture and bacon, then thyme. Serve.
Notes
For maximum flavour, use juicy ripe tomatoes. Replace bacon with crumbled fetta.
