Ingredients
Tomato and basil bread and butter pie
- 1 tablespoon vegetable or olive oil
- 2 medium brown onions, thinly sliced
- 3 410g cans chopped tomatoes with basil and garlic
- 2 teaspoon caster sugar
- 1/3 cup chopped basil
- 8 1 cm slices sourdough bread
- 30 gram butter, at room temperature
- 1/2 cup shredded parmesan
Method
Tomato and basil bread and butter pie

1Preheat oven to 200°C (180°C fan-forced). Lightly grease a 20cm square ovenproof dish. Heat oil in a large frying pan over moderate heat. Cook and stir onion for 8-10 minutes or until very soft.

2Add tomato; cook and stir for 10 minutes or until mixture thickens slightly. Stir in sugar and basil. Season with salt and pepper.

3Spoon mixture into prepared dish. Spread one side of bread with butter. Place bread in dish, buttered-side up, overlapping slices. Sprinkle with cheese. Bake for 30 minutes or until bubbly and golden.
Notes
Use regular white crusty bread. Replace basil with parsley. Basil can bruise easily - chop just before using. Use any leftover basil in soups, casseroles and dips.
