Ingredients

Tomato and basil bread and butter pie
  • 1 tablespoon vegetable or olive oil
  • 2 medium brown onions, thinly sliced
  • 3 410g cans chopped tomatoes with basil and garlic
  • 2 teaspoon caster sugar
  • 1/3 cup chopped basil
  • 8 1 cm slices sourdough bread
  • 30 gram butter, at room temperature
  • 1/2 cup shredded parmesan

Method

Tomato and basil bread and butter pie
  • 1
Preheat oven to 200°C (180°C fan-forced). Lightly grease a 20cm square ovenproof dish. Heat oil in a large frying pan over moderate heat. Cook and stir onion for 8-10 minutes or until very soft.
  • 2
Add tomato; cook and stir for 10 minutes or until mixture thickens slightly. Stir in sugar and basil. Season with salt and pepper.
  • 3
Spoon mixture into prepared dish. Spread one side of bread with butter. Place bread in dish, buttered-side up, overlapping slices. Sprinkle with cheese. Bake for 30 minutes or until bubbly and golden.

Notes

Use regular white crusty bread. Replace basil with parsley. Basil can bruise easily - chop just before using. Use any leftover basil in soups, casseroles and dips.
