Ingredients

Tomato bread
  • 12 slices ciabatta bread
  • 1/4 cup (60ml) olive oil
  • 2 cloves garlic, crushed
  • 1/4 cup (60ml) tomato puree
  • 12 thin slices prosciutto
  • basil leaves (optional), to garnish
  • salt and pepper, to season

Method

Tomato bread

    Preheat oven to 180°C. Line an oven tray with baking paper.

    Arrange bread on baking tray. Brush with combined olive oil and garlic. Sprinkle with salt and pepper.

    Bake for 5-10 minutes, until golden. Lightly brush bread slices with tomato puree while hot. Top each with a slice of prosciutto and garnish with a basil leaf, if desired. Season to taste, then serve.
