  • soft corn tortillas, sliced into thin strips

Method

Tortilla crisps

    Slice soft corn tortillas into thin strips; shallow-fry in vegetable oil, in batches, until browned lightly.

    Drain on absorbent paper.

    Serve with tomato soup, or scatter on top of pureed red kidney bean soup along with cubes of avocado or a spoonful of chilli con carne.

Notes

Soups can be a clever way to impress a crowd or soothe yourself on a cold day. For many of us though, it has become a trusty back-up in the freezer when we need some quick sustenance. What you serve with it can make or break it.
