Ingredients
Tuna and bean toss
- 420 gram can four bean mix, rinsed
- 425 gram can tuna in springwater, drained, flaked
- 250 gram cherry tomatoes, halved
- 2 lebanese cucumbers, chopped
- 1/2 red onion, finely chopped
- 2 sticks celery, thinly sliced
- 1/4 cup marinated char-grilled capsicum, drained, chopped
- 1/3 cup 97% fat-free french dressing
- 1 butter lettuce, washed, leaves separated
- crusty bread, to serve
Method
Tuna and bean toss

1Combine all ingredients except the lettuce and bread in a large bowl. Toss salad gently.

Notes
Use ripe regular tomatoes instead of cherry. Canned tuna is a great source of omega-3 fatty acid. Add sliced black olives if you like. Use iceberg instead of butter lettuce.
