Ingredients

Tuna and bean toss
  • 420 gram can four bean mix, rinsed
  • 425 gram can tuna in springwater, drained, flaked
  • 250 gram cherry tomatoes, halved
  • 2 lebanese cucumbers, chopped
  • 1/2 red onion, finely chopped
  • 2 sticks celery, thinly sliced
  • 1/4 cup marinated char-grilled capsicum, drained, chopped
  • 1/3 cup 97% fat-free french dressing
  • 1 butter lettuce, washed, leaves separated
  • crusty bread, to serve

Method

Tuna and bean toss

    Combine all ingredients except the lettuce and bread in a large bowl. Toss salad gently.

Notes

Use ripe regular tomatoes instead of cherry. Canned tuna is a great source of omega-3 fatty acid. Add sliced black olives if you like. Use iceberg instead of butter lettuce.
