Ingredients
Tuna croquettes
- 90 gram butter
- 1/3 cup (50g) plain flour
- 1 cup (250ml) milk
- 425 gram can tuna in brine, drained and flaked
- 1/2 cup (130g) roasted capsicum, chopped
- 1/4 cup parsley, chopped
- 1 lemon, finely grated rind
- 1 egg, beaten
- 1 1/2 cup (150g) dry breadcrumbs
- 2 cup (500ml) oil
- lemon aioli, salad and lemon wedges, to serve
Method
Tuna croquettes

1Melt butter in a saucepan on medium heat. Stir in flour and cook for 1 minute. Remove from heat and mix in milk.

2Return to heat. Cook, whisking, until mixture boils and comes away from sides of saucepan. Remove from heat and cool.

3Mix in tuna, capsicum, parsley and lemon rind. Season to taste. Chill for 1 hour, until mixture can be moulded.

4Shape 1/4-cup measures of mixture into small sausage shapes. Dip in egg and coat in crumbs. Chill for 15 minutes.

5Heat oil in a frying pan. Cook croquettes in batches for 1-2 minutes each side, until golden and heated through. Drain on paper towel.

6Serve with aioli, salad and lemon wedges.
Notes
To make a simple aioli, combine mayonnaise with crushed garlic and grated lemon rind.
