Turkey berry rissoles with cheesy mash
- 500 gram potatoes, peeled, chopped
- 500 gram turkey mince
- 1 red onion, finely chopped
- 1/4 cup cranberry sauce, plus extra to serve
- 2 tablespoon chopped parsley
- 1 tablespoon tomato sauce
- 1 cup dried breadcrumbs
- 1 tablespoon oil
- 1/4 cup milk
- 20 gram butter
- 1/2 cup shredded tasty cheese
- salad leaves, to serve
Method
Turkey berry rissoles with cheesy mash

1Place potatoes in a large saucepan and cover with cold water. Bring to the boil on high. Cook 15-20 minutes, until tender.

2Meanwhile, in a large bowl combine turkey mince, onion, cranberry sauce, parsley and tomato sauce. Season to taste. Mix well. Shape into 8 even-sized patties. Flatten slightly and coat in crumbs.

3Heat oil in a large frying pan on high. Cook patties 3-4 minutes each side until cooked through. Drain on paper towel. Keep warm in a very slow oven, 120°C.

4Meanwhile, drain potatoes and return to pan. Mash well with milk and butter. Mix in cheese and season to taste.

5Serve patties with mash, extra sauce and salad leaves.
