Turkish bread vegetable pizza
- 1 zucchini, sliced thinly
- 2 baby eggplants, sliced thinly
- 1 kumara, sliced thinly
- 1 red capsicum, sliced thickly
- 200 gram mushrooms, sliced thickly
- 1 loaf turkish bread
- 1/3 cup (85g) bottled tomato pasta sauce
- 1/4 cup (65g) sun-dried tomato pesto
- 125 gram cherry tomatoes, quartered
- 2/3 cup (100g) seeded kalamata olives
- 1 1/4 cup (125g) coarsely grated mozzarella cheese
Method
Turkish bread vegetable pizza

1Cook zucchini, eggplant, kumara, capsicum and mushrooms on heated oiled flat plate, uncovered, until tender.

2Cut bread into quarters; split each piece in half horizontally. Brush cut-side of each bread piece with combined pasta sauce and pesto. Divide grilled vegetables, tomato, olives and cheese among bread pieces.

3Cook pizzas on heated oiled flat plate, covered, until bases are crisp and cheese melts.
